To my surprise this was a huge hit with the whole family. Ironically I did not double the recipe (the recipe I post here is doubled).
Preheat oven to 350 degrees.
Brown...
2 lbs Ground Beef
1/2 pkg Onion Soup Mix (instead i used 1 Vegetable Bullion Cube)
Drain, add, mix, and then set aside...
1/2 pkg Onion Soup Mix (instead I used 1 Vegetable Bullion Cube, Salt, and Onion Powder to taste)
1 cup Shredded Cheddar Cheese
In medium bowl mix together well...
4 whole eggs
1/2 cup Unsweetened Canned Coconut Milk
1 cup Mayo
1 cup Shredded Cheddar Cheese
Place Meat Mixture on the bottom of 9x13.
Pour Eggs Mixture over the top.
Bake 30 minutes. Remove from oven and let set for 10 minutes before serving.
Heat Tortillas (1-2 per person) in a pan with Coconut Oil.
Add Cheeseburger Meat to the middle of each Tortilla. Add Topping of your choice - Shredded Lettuce, Diced Tomatoes, Salsa, Ranch Dressing, Ketchup, Guacamole. Fold Tortilla in half like a taco. Eat!!
Side Dish - 6 Sliced Bell Peppers dipped in Ranch Dressing

Homemade Egg Rolls
One of my favorite things in the world are homemade egg rolls. I am making them tonight. I have modified it from when I was a kid. So this is my recipe for tonight...
1 head Green Cabbage, shredded
1-2 bags Fresh Spinach, shredded
1lb Carrots, shredded
1-2 bunched Green Onion, sliced
1-2 lb Ground Hamburger, cooked
Season with Bragg's Liquid Aminos (Soy Sauce), Salt, Garlic Powder
(I usually add Mung Bean Sprouts but they are recalled and unavailable)
2 pkgs Egg Roll Wrappers
Coconut Oil
Sweet and Sour Sauce
Mix the first 6 ingredients in a huge mixing bowl. Roll the egg rolls. Look on egg roll wrapper if you need instruction on how to roll them. Fry them in coconut oil until brown.
Serve with Sweet and Sour Sauce or Liquid Aminos.
Many times I have made the egg roll mix and served it as a salad. Its super yummy!

Berry Crumble
from "Primal Blueprint - Quick and Easy Meals" by Mark Sisson
My two girls (ages 8 and 9) can make this on there own. It is great for breakfast. Its so yummy!!
1/2 c. Walnuts
1/2 c. Pecans
a pinch of salt
1/4 t. Cinnamon
1/8 t. Nutmeg (or Cardamon)
1 T. Butter, cut up into small pieces
1 T. Vanilla
3 c. Berries (Fresh or Frozen)
Preheat oven Broiler to Low.
In Food Processor (or Blender) grind Walnuts until they are Finely Chopped. Add Pecans, Salt, Cinnamon, Nutmeg and Butter and pulse until just blended, 10-15 seconds.
In a Small Pot, heat Berries with Vanilla. Bring to a Gentle Boil for 5 minutes - so that the Berries are well Heated. Drain off any excess liquid. Some liquid is okay. Place Berries in a small oven proof dish. I used a Pie Dish.
Spoon the Nut Mixture evenly on to of the Berries. Put under Broiler and Heat several Minutes until top is Lightly Browned. Be Careful not to Burn the Nuts.
Eat it.
I am going to try it with Peaches Soon.
