My two girls (ages 8 and 9) can make this on there own. It is great for breakfast. Its so yummy!!
1/2 c. Walnuts
1/2 c. Pecans
a pinch of salt
1/4 t. Cinnamon
1/8 t. Nutmeg (or Cardamon)
1 T. Butter, cut up into small pieces
1 T. Vanilla
3 c. Berries (Fresh or Frozen)
Preheat oven Broiler to Low.
In Food Processor (or Blender) grind Walnuts until they are Finely Chopped. Add Pecans, Salt, Cinnamon, Nutmeg and Butter and pulse until just blended, 10-15 seconds.
In a Small Pot, heat Berries with Vanilla. Bring to a Gentle Boil for 5 minutes - so that the Berries are well Heated. Drain off any excess liquid. Some liquid is okay. Place Berries in a small oven proof dish. I used a Pie Dish.
Spoon the Nut Mixture evenly on to of the Berries. Put under Broiler and Heat several Minutes until top is Lightly Browned. Be Careful not to Burn the Nuts.
Eat it.

Bacon Cheeseburger Quiche
1 lb Ground Beef
1 Onion, Chopped
4 Slices Bacon, Cooked Crisp and Crumbled
3 Eggs
1/2 c Mayo
1/2 c Heavy Cream
8 oz Shredded Cheese
Garlic Powder to Taste
Preheat oven to 350 degrees. Brown Beef and Onion until cooked. Drain well.
In large bowl combine Bacon, Cooked Beef and Onions. Press onto the bottom of deep-dish pie pan. Set aside.
In mixer bowl combine remaining ingredients. Whip well. Pour mixture over 'Beef' crust.
Bake 40-45 minutes until top is browned and set. Cool 15-20 minutes before slicing.
Makes about 4 Servings
We usually double it. Makes great leftovers.
I like to serve some Fresh Fruit on the Side.

BLT Salad
Here's a family favorite that ALL my kids will eat - happily. And its Super Easy!!
1 Head of Lettuce, finely shredded
2-12 oz pkg Bacon, cooked and crumbled
8 oz Fiesta/Mexican Blend of Shredded Cheese
1+ c Sliced Grape Tomatoes
Add all Ingredients together to make a Salad.
My kids like to put the Salad into a Pita Pocket.
Top with Sour Cream, Ranch Dressing or Other Favorite Topping.
Makes About 6 Servings

2 1/2 - 3 c Frozen Strawberries
4-6 oz Cream Cheese
12 Packets Stevia (= 1/2 c Sugar)
1/2 tsp Vanilla Extract
1/4 tsp Almond Extract
1/2 c Crushed Ice Cubes
Add all Ingredients to BlendTec/VitaMix and Blend until its Ice Cream.
Optional - After Ice Cream is blended add 1-2 handfuls of Nuts (I have used Almonds) and Pulse to Chop and Mix them in.
Makes 2-4 servings
